Sub Categories Mark Up
Why not brighten up your pages visually by using graphics or images to link through to your sub-categries instead of simple text links. Good examples of this in use can be seen at:

Scroll down the page to the 'Shop by Category' section. Images representing the subject matter of the categories have been used to great effect here to add 'interest' to the sub category links.
